Butterfly cut XS- 1-1.5 lbs

Small- 1.5-2 lbs

Medium- 2.5-3lbs

FOR BEST RESULTS: Brine in a 1/4 cup of salt and water at least an hour before cooking for tasty, melt-in-your-mouth pork!
